印度早餐

原本這是一道印度早餐, 源自Kerala. 不過Yves覺得作為"一個人"的簡單晚餐亦不錯.



Masala Omelette 印度馬沙拉奄烈

Ingredient 材料 :
Vegetable Oil 油 1 tbsp
Garlic 1 clove
Onion 洋蔥 1/2 no.
Green Pepper 青椒 1/2 no.
Red Pepper 紅椒 1/2 no.
Yellow Pepper 黃椒 1/2 no.
Turmeric 黃薑粉 1/4 tsp
Ground Coriander 1 tsp
Ground Cumin 1 tsp
Egg 2 no. (beaten)
Fresh Basil Leaves some sprig

1) 將所有材料切粒.
2) 先炒香Garlic, 加入其他材料及香料並炒香.
3) 加入打散雞蛋, 慢火煎.

1) 最後步驟可放入焗爐一會, 更香脆.


Green Coriander Chutney 印度番茜醬

Ingredient 材料 :

Green Chllie 青長椒 5 pcs
Ginger 1 pcs
Garlic 3 cloves
Coconut Milk 1 small can
Sour Cream 100g
Coriander 番茜 1 large bunch
Fresh Basil Leaves a few
Salt a few
Cater Sugar a few
Lime 3 nos.

1) Put all the ingredients into the blender, whisk well.

YvesTips:
1) 因為家裹Basil Leaves今期比較好. 原recipe 是用Mint.
2) 可存放雪櫃一個月.

我想問如果整 Green Coriander Chutney, 你覺得用 MINT 的味道與用 BASIL LEAVES 的味道有沒有很大差別?? 那種味道比較香??

我覺得Mint 會中於原著, 但Basil 都好香. 其實兩種我都好喜歡. 所以我取決於我的香草收成.

You can make it spicy by putting more little red chilli. That would be very nice.
