Cold Soup & Angel Hair 凍湯&天使麪

During the hot hot day, we can make the Italian Cold Soup to help us as a good start of a meal. Very easy to make and advisable to keep in the fridge before serving.

BEET ROOTS, CARROT & ORANGE SOUP
紅菜頭,甘筍及香橙凍湯



Ingredient:
Chopped Garlic 1 tbsp
Grated Ginger 1 tbsp
Grated Carrot 1 no
Beet Root 150g
Veggie Stock 600ml
Orange Juice 60ml
Sour Cream to serve
Parsley to decorate

Method:
1) Heat the oil into the saucepan, fry the garlic & ginger.
2) Then add carrot & beet root and fry for 10mins.
3) Add stock into the saucepan and simmer for 20mins.
4) Use the handheld blener to make the puree.
5) Stir in orange juice.
6) Serve with sour cream & parsley.

YvesTips:
1) Change the taste by using Tomatoes with carrot or Tomatoes with celery.
2) The soup has a high content of fibre.

MEAT BALL SERVE WITH ANGEL HAIR IN TOMATOES SAUCE
羅勒番茄汁肉丸天使麪



Ingredient:

Meat Ball
Minced Pork 150g
Egg 1/2 no
Dried Oregano 1 1/2 tbsp
Black Pepper Some
Bread Crumbs 3 tbsp
Salt a pinch

1) Mix all the ingredients and form into a ball shaped.
2) Put in the fridge for at least 30 mins.

Angel Hair
1) Cook in the hot salty water for 4 mins (or according to the packing)
2) Drain under the cold water. Put it aside.

Tomatoes Sauce
Canned Tomatoes 1/2 can
Italian Herbs 1 tbsp
Chopped Onion 1 no
Salt & Pepper to taste
Sugar 1 tsp
Water 30ml

1) Fry the onion until golden.
2) Then add canned Tomatoes and herbs.
3) Add the other seasoning until the aroma comes out.
4) Add the meat ball and cook. If there's running out of sauce, add some more water.
5) Cook about 15mins or until the meal ball are cooked.
