Italian Dinner 意式晚餐

MARINATED TOMATOES WITH BASIL LEAVES
羅勒番茄前菜


Ingredient:
Tomatoes 2 nos.
Olive oil 3 tbsp
Ground Galic 2 tbsp
Sea Salt a pinch
Sugar 2 tsp
Pepper to season
Basil Leaves a few (chopped)

Method:
1) Mix all the ingredients together.
2) Marinated over night.

LEMON RISOTTO 香檸意式燴飯


Ingredient:
Shallot 1 no.
Butter 60g
Olive oil a few
Risotto Ric 300g
Vegetable Stock 1 litre
Rosemary 2 sprags
Lemon rind 1 no.
Lemon juice 1/2 no.
Parmasan Cheese 60g
Egg Yolk 1 no.
Cream 60ml
Salt & Pepper to taste

Method:
1) Heat the frying pan with butter & olive oil. Fry the shallot for 5 mins.
2) Add the risotto rice, let the oil cover all the rice.
3) On the other saucepan, boil the vegetable stock. Keep it simmering.
4) Add each ladle of stock into the rice and stir until absorbed.
5) Keep on pouring stock and then stirring. For at least 30mins.
6) Add lemon rind & chopped rosemary leaves. Stir well.
7) Whisk the egg yolk, cream, parmasan cheese & juice.
8) Until the rice is done, get from the heat and stir the liquid to let is absorb.
9) Add the remaining butter & parmasan. Ready to eat!


ORANGE & LIME ICE-CREAM 青橙雪糕
This is a very easy ice-cream with no extra stirring is required. Just mix and freeze. Gotcha!


Ingredient:
Orange 1 no.
Thai Lime 3 nos.
Icing Sugar 150g
Cream 580ml

1) Squeeze the orange juice & lime juice.
2) Dissolve the icing sugar into the juices.
3) Add the orange & lime rind into the mixture.
4) Pour the liquid into cream and whisk until the soft peak is formed.
5) Put into the chiller. Done!

Not at all, I should be very shy as I am not good at cooking chinese food (or I should say I really have no idea how to cook), so my husband need to tolerate it. hehe
