Charlotte Fruit Cake



今次的圍邊Fail了, 希望下次會成功!

材料:
圍邊手指餅
Egg White 2 nos
Egg Yolk 2 nos
Sugar 60g
Cake Flour 55g (But I have added some more)

1) Whisk egg yolk with sugar until very thick. (This is the reason why I failed) **Important**
2) Fold in the flour into the mixture.
3) Whisk egg white until stiff, then slowly fold into the egg mixture.
4) Put into the piping bag, and squeeze the finger shape and the cake base.
5) Bake at 180c for 15 mins.

Orange Mousse Cake
Fresh Orange Juice 100ml
Fresh Lemon Juice 40ml
Sugar 70g
Gelatine Sheet 2 pcs
Egg Yolk 1 no
Cointreau 10g
Cream Cheese 50g (I added 60-80g, Keiwa Cream Cheese)
Whipping Cream 120g
Egg White 1 no

1) Boil orange juice & lemon juice with sugar.
2) Get away from stove, add soften gelatine sheet and stir until dissolve. Then add egg yolk, stir well. Until cool, add Cointreau & cream cheese.
3) Drain thru the mixture into the nylon sieve to make sure the liquid is smooth. No more cream cheese cube.
4) Whisk whipping cream until thick and add to the mixture.
5) Whisk egg white with sugar and until stiff. Add to the mixture.
6) Use the baked finger & base to form the cake shape inside the cake ring. Pour the mousse into the ring. Chill for at least 4 hours.

Its the basket pie difficult to make?
I like this cake, but its kinda difficult for me.
